Meatless meals can be just as rich in flavor as non-vegetarian meals. Take this miso onion soup for example. The onions give this broth a subtle sweetness, while the miso adds a little toasty umami-ness. I added egg noodles, some tofu, and radish sprouts to complete the final touch!
Miso Onion Noodle Soup (serves two hungry parents):
- 1/2 of a sweet yellow onion or about 3/4 cups of sliced onions
- 3 cups of water or broth of your choice
- 1 1/2 tbs miso paste
- 2 tsp of soy sauce
- 2 tsp sesame oil
- 1/2 tbs of ginger
- 1 bunch of egg noodles
- 1/2 shitake mushrooms
- a pinch of salt
- toppings of your choice (featured in video: green onion, tofu & radish sprouts)
Cook down onions, then add mushrooms with some salt, sesame oil, and ginger. Continue cooking for about 15 - 20 min. Add your water, mix in miso paste with a strainer to avoid clumps. Now bring to a boil and simmer for another 15 min. While soup is cooking, throw your egg noodles into a pot of boiling water for 8-10 min. Drain and rinse noodles with water to remove excess starch. Plate your noodles, pour in your soup, and finish off with toppings. Stuff your face lol.
