INGREDIENTS
Pumpkin: 1/2 of medium size pumpkin (chopped)
Mustard seeds: 1 tsp
Cumin: 1 tsp
Urad and Channa dal: 1 tbsp
Green chillies: 7-8 (adjust to taste)
Curry leaves: 8-10 leaves
Turmeric: 1/2 tsp
Salt to taste
Sugar: 1/2 tsp
Coriander leaves: 1/2 cup
Oil: 2 -3 tbsp
Water as required
PROCEDURE
Heat oil in a kadai, add mustard seeds, cumin, urad and channa dal. Fry well.
Add green chillies and curry leaves. Fry well.
Next add chopped pumpkin. Sauté.
Add turmeric and sauté well.
Add water as required to help the pumpkin soften.
Cover and cook until the pumpkin softens and cooks well.
Remove lid and mix in between to avoid burning them.
Once the pumpkin softens, add salt to taste and then add sugar.
Water evaporates.
Lastly sprinkle coriander leaves.
Pumpkin Sabji is ready. Serve hot with akki rotti or chapati.
