What You Need:
Bunch of Green Beans
1 chopped shallot
2 chopped garlic
1 stick unsalted butter
1/2 C chopped parsley
olive oil
salt
pepper
thyme
How-To:
Compound Herb Butter:
In medium bowl combine butter, parsley, salt and pepper and mix together. Chill in refrigerator for 10 min.
Beans:
Boil water in large pot. Add salt. Blanch green beans in hot water for 3-5 mins. Then shock beans in a bowl of ice water. This stop the cooking process while maintaining the vibrant green color.
Then heat olive oil in pan. Add and sauté both shallots and garlic. Season with salt and pepper. Drain and add green beans to pan. Scoop 1-2 Tbsp of herb butter in pan. Continue to sauté for 10 mins.
