Ingredients for Akhrot ka Halwa (Walnut Halwa):
Cow Trotters - 2
Cumin - 2 Tbsp
Whole Garam Masala
-Big Cardamom
-Cinnamon Sticks
-Cloves
-Black Peppercorn
Bay Leaf - 2
Ginger Garlic Paste - 2 Tbsp
For Gravy
Onion 3 Medium
Yogurt 125g
Cumin 1 tbsp
Whole Garam Masala Big Cardamom Cinnamon Sticks Cloves Black Peppercorn
Salt As per taste
Coriander Powder 4 tbsp
Red Chili Powder 3 tbsp
Garam Masala Powder 1 tbsp
Turmeric Powder 1 tbsp
Step by Step Direction for Cow Trotters (Bary k Paye):
-Wash cow trotters properly
-Now add water in a pot and boil cow trotters
-When it comes to boil, drain the water
-Fill the cooker upto 3/4th capacity and add boiled trotters
-Add cumin, whole garam masala, bay leaf and ginger garlic paste
-Mix well
-Cover the lid and pressure cook for 2 and half hours on medium flame
-In another Pot add onions to fry until golden brown
-Once it is brown, remove the onions and grind with yogurt
-Make a smooth paste.
-Add cumin and whole garam masala in pot to saute
-Now add prepared onion paste
-Mix well
-Add salt, coriander powder, red chili powder, garam masala powder and Turmeric powder
-Mix well
-Add some water, cover the lid and let it cook until water evaporates and oil separates
-Once the gravy is prepared turn off the flame
-When cow trotters are well cooked and broth is reduced to half quantity, add prepared gravy in the broth.
-Add fresh green chilies, cover the lid and let it cook for another 1 hours
-After one hour trotters are ready to dish out
-Garnish with fresh coriander and green chilies, and enjoy the delicious Paye with Naan
