This recipe is my tried and true southern cast iron skillet fried chicken. Brining the chicken overnight ensures the fried chicken comes out moist and tender. The crust on this chicken is crispy, crunchy and oh so tasty! The added hot sauce in the coating process gives it a tangy heat and finger lickin' flavor.
Ingredients
Whole chicken
2 quarts water
1/4 cup sugar
1/4 cup kosher salt
3 cups flour
2 tsp kosher salt
2 tsp lemon pepper
2 tsp powdered garlic
2 tsp paprika
2 large eggs
1 tbls hot sauce (optional)
Tips for good fried chicken
1. Brine overnight 8 to 12 hours
2. Heat oil to 350 to 375 degrees Fahrenheit
3. Let the chicken come to room temperature for even cooking
4. After coating chicken let it set for 10 minutes before frying
