INGREDIENTS3 eggssalt200g sugar50ml vegetable oil100g almond flour3 shredded carrotslemon zest200g flour16g baking powder powdered sugar DIRECTIONS1. Shred the carrots using a blender.2. Beat the eggs together with the sugar, oil and almond flour, then add the shredded carrots.3. Gradually add the flour, and lastly the baking powder.4. Bake at 180°C for about 40 minutes. To keep the cake nice and high until you serve it, turn off the oven once the cake is done, and let the cake stay in the warm oven until you are ready to serve it.5.
