Shortbread Cookie Recipe: Used as walls to keep batter in place! 16 g egg white powder (approximately 2 Tbs.) 1/4 cup granular monkfruit (approximately 48 g) 55 g coconut flour (approximately 7 Tbs) 1/4 tsp xanthan gum 1/2 tsp vanilla 1/2 tsp stevia 4 Tbs melted coconut oil pinch of salt Preheat oven to 350 degrees. Mix dry ingredients together, mix wet ingredients together. Combine them to form a dough. Form dough on parchment or clean surface with hands about a 1/4 inch thick. Cut out into graham cracker cookie shapes for walls and place on a piece of parchment with a spatula, should get 10 wall cookies. Bake for 7-10 minutes turning half way threw. Chocolate Cookie Dough mix: Pyure sugar free chocolate chip cookie mix: I would use a few ounce less than the whole pack. Keto Macadamia Chocolate Chip cookies: recommend making full batch and freezing leftovers! Use 1 3/4 cup of dough for one of the eight sections. 1 1/4 c Almond Flour 2 Tbs. Coconut flour 1 Tbs. arrowroot flour 1/2 tsp. salt 1/2 tsp. baking soda 1 Tbs. unflavored gelatin 1/2 cup chopped macadamia nuts 10 1/2 Tbs butter (room temp) 1/2 cup + 1 Tbs golden sweetener (i used lakanto) 1 egg (room temp) 1 tsp. vanilla extract 3 oz chopped chocolate bar or chips (i used lilys salted caramel chocolate bar) Cream the butter and sweetener for ten minutes after 2 minutes scrap down the bowl. Add egg and vanilla then add the sifted dry ingredients in 2 batches then fold in nuts and chocolate. Refrigerate dough for one hour then scoop onto parchment paper not silicon cause they will spread too much, flatten them slightly and don't crowd them to much. Makes 18 small or 12 jumbo cookies. Can scoop, flatten and freeze flat just let thaw while the oven is heating up. Cook at 350, small cookies 9-10 mins, large 12-13 minutes. Keto Pie Crust: Recommend a more sturdy crust but it tastes good. 125 g almond flour 35 g coconut flour 1/2 tsp. baking powder 1 stick of butter (softened and cut into small chucks) 1 tsp. vanilla extract 1/4 cup powdered monkfruit sweetener Combine all ingredients in a medium sized bowl and mix to form a dough. Roll to fit the two sheet tray spaces for pie. Normally you pat into a circle, 1/4 inch thick, poke with holes and bake at 350 degrees for 10-12 minutes. Then top with a sweetened cream cheese and fruit. Keto "apple" pie filling: I roughly followed this recipe. https://www.wholesomeyum.com/low-carb-keto-apple-pie-recipe/ Keto Cheesecake Recipe: 1 lb cream cheese (softened) 1/2 cup sour cream (room temp) 2 eggs (room temp) 2/3 cup granular monkfruit sweetener 2 tsp. vanilla Cream together the cream cheese and sweetener scrapping down the bowl frequently, add in the sour cream and mix. Scrap down bowl and mix in one egg at a time along with the vanilla. Divide in half and add 1/2 tsp cinnamon and 1/4 cup Perfect Keto snickerdoodle peanut butter to half of the mixture and mix well. Sift in 1/4 cup cocoa powder and optionally add some liquid stevia if you want it sweeter to the other half and mix well. Keto Cheesecake Crusts: Approximately 1/2 cup each of 2 kinds of Keto cookie crumbs and approximately 1 Tbs. melted butter for each, mixed to form a wet sand consistency. Pat into 2 of the sheet tray spots. Keto Banana Caramel muffin mix: I used most of the batter, maybe do a little less. Keto and Co. Banana Caramel muffin mix Keto Blueberry Pancake Mix: Good Dee's Blueberry pancake mix: 1 cup mix prepared with 2 Tbs less milk. Assembly: Grease a half sheet pan and cover in parchment paper. Preheat oven to 300 degrees. Start with cookie dough sections, top left and adjacent to top left section I recommend a little less than 2 cups of dough. Then roll out pie dough between two pieces of parchment paper into a rectangle to fit 2 sections on the right side of the pan. Pat one of the cheesecake crusts next to the top pie section. Place walls around the first cheesecake section and around the bottom left section between the 2 cookie doughs. Pat in the second cheesecake crust between the pie and cookie dough and add walls around that crust. Fill with the 2 cheesecake batters. Then the banana muffin mix, then the pie filling into the pie dough fell free to make a barrier in the middle of the pie dough and make pumpkin pie batter. Lastly mix the pancake mix, and fill the last section with the mix. Bake at 300 degrees for 1 hour, rotating half way threw. I recommend letting cool on the counter for a few hours then refrigerating for several hours before trying to unmold and cut.
